Interview With Erin ~ Fresh 365


Good morning! Hope you've had a nice week so far. We're having lots of sun in the Seattle area and I'm clinging to every last bit of it. I love the Fall colors that are slowly appearing, though. I have a friend that lives in Maui who says they don't get much of an Autumn so I'm trying not to take the colorful leaves for granted.

Here's that interview with Erin from Fresh 365 that I promised yesterday. Her blog is a huge inspiration, focusing on healthy organic food choices and recipes. I also love a little section on her site that lets the reader know which foods are in season. I've always had such a hard time remembering that. ;) O.k., here's that interview! Enjoy getting to know the person behind this inspiring blog. :)

Vicki: Tell us a little about yourself, your background, your interests and talents

Erin: Vicki, thank you so much for having me on Simply Hue. I love your blog and interviews, and am honored to be a part! I began fresh 365 eight months ago as a way to catalog my recipes and experiment more with photography. I live outside Boston, which is where I was born and raised. And although I complain about the cold, I do love the seasons which give so much inspiration for new recipes. I graduated from New England School of Art and Design in ‘02 and have worked since worked as a designer in numerous fields. I love traveling and photography, and well, food.


Vicki: Are you a chef by profession?

Erin: No, actually, I am a graphic designer. I constantly seek a creative outlet and am not happy unless I am busy with a project or six. I love taking cooking classes and will hopefully be teaching one soon too!

Vicki: Have you always enjoyed cooking?

Erin: I don’t think I really became interested until after college when I began dating my (now) husband. It was easy to satisfy myself on ramen noodles (Did I mention I have a slight addiction to salt?) but dinner-for-two required something a bit more. I had often helped my mother in the kitchen growing up and knew the basic principles, so I just started reading recipes and experimenting.


Vicki: What's the most rewarding thing about what you do?

Erin: Friends often ask if I like cooking and I usually answer “I like eating”. It’s true, I love experimenting with different ingredients and tasting cuisine from different cultures. I get the most pleasure watching friends and family enjoy my recipes. Recently, it’s been great to hear feedback on the recipes I publish and connect with so many other creative people.


Vicki: ~ Do you have a favorite dessert recipe? Can you share it with us?

Erin:I love making crumbles with whatever fruit is in season. It is very simple and also perfect for a crowd. I often use this recipe, and just switch out the fruit.


Vicki: What are 3 things you would like people to know about you?

Erin: Oh gosh, that’s a tough one. How about 3 random food-related facts?

~ I was recently at a party where a guy brought curried goat’s brain.
~ I am pretty clumsy and make a mess when I cook. Which drives me crazy, because I like everything to be clean, clean, clean!
~ I have been a vegetarian for a few years, but still crave bacon. (See? It’s the salt addiction!)

    Whenever I need inspiration on what to make for dinner I visit Erin's site -her photographs make me hungry!!! Crumbles are my favorite dessert too!

  15. Great interview!! I am ALWAYS inspired by Erin, she is without a doubt one of the most talented people I have the pleasure of knowing!!! And thankfully, because she is married to my nephew I get to actually eat some of her wonderful recipes!! YUMMM!!!!! Love her!!!
